As promised, here is the second guide on the two-part series of Lip-smacking Starters for Monsoon. Hope you liked the first one as well from Barbeque Nation.
Cajun Spiced Potato – Serves 4
Ingredients
Baby Potato – 250 gms
Garlic – 25 gms
Oil – 20 ml
Chilli sauce – 2 tsp
Cajun Powder – 2 tsp
Chopped onion – 3 tsp
Chilli powder – ½ tsp
Chilli flakes – 1 tsp
Chaat Masala – ½ tsp
Chopped coriander – for garnish
Salt – to taste
Method
1. Put the garlic in the mixer and make a paste out of it.
2. Pour oil gradually in the mixer to prepare the garlic mayonnaise.
3. Mix the mayonnaise with Cajun powder and chilli sauce. Cajun sauce is ready.
4. Half boil the baby potatoes. Press the potatoes into round shape and deep fry.
5. Mix chaat masala, chilli flakes and chilli powder. Sprinkle it on the baby potatoes.
6. Pour the Cajun sauce on the top of the potatoes before serving.
7. Garnish with chopped onions and chopped coriander. Serve hot.
Thai Mushroom – Serves 4
Ingredients
Mushroom - 250 gms
Garlic - 20gm
Ginger - 20gm
Green chillies - 15gm
Refined Oil - 01 tsp
Red Thai Curry Paste - 25 gm
Lemon - 1 no.
Tomato Ketchup - 1 tsp
Tomato Puree - 1 tsp
Coconut Milk - 20 ml
Chopped Basil - 5 gm
Salt - to taste
Method
1. Boil the mushrooms for 3 minutes and let it cool down.
2. To remove slits from mushroom, wipe it with damp kitchen cloth and remove stalks.
3. Finely chop the green chillies and prepare a ginger garlic paste.
4. Mix the paste, green chillies, red Thai curry paste, tomato ketchup, tomato puree, chopped basil, coconut milk and lemon juice.
5. Add oil in a pan. When hot, pour the mixed paste and let it simmer on low flame.
6. When cooked, add the mushrooms and mix thoroughly. Take it out after 3 minutes.
7. Thread it on skewers and barbeque it for 3 minutes before it is served.
